Artisan Baking Company is a small family business that specializes in great bread and baked good made with skill and craftsmanship. The most important ingredient is the tremendous time and effort it takes to make superb baked goods from scratch, every day.
Our philosophy: Fresh...Seasonal...Local.
Our baked goods are baked fresh daily. We use fresh fruits, vegetables and herbs sourced from vendors at Cowtown Farmers Market. We are a local company that supports other local, family-owned businesses.
We use the finest ingredients available, organic when possible. European-style high fat butter. Unbleached and whole grain flours. Minimally processed sea salt. Non-aluminum baking powder. Fresh eggs and milk from Nors Dairy in Abbott. Fresh garlic from the garlic capital of the world: Gilroy, Calif.
No shortcuts. No mixes. No high fructose corn syrup. No hydrogenated fats. No artificial flavors, colors or fats. No fake foods, ever.
We DO NOT offer "gluten-free" items, because it would be irresponsible for us to do so. When we make our breads, flour becomes airborne and is present in the ventilation system, on the walls and ceiling, in our clothing, etc. We encourage you to buy gluten-free items from facilities that do not make any items with gluten. Whole Foods stocks items from its own gluten-free bakery, and there is a gluten-free restaurant/bakery in Plano, Texas.
We DO NOT make "sugar-free" or "fat-free" items, although some of our products are made without sugar or fat, such as our sourdough bread and our new, delicious no-sugar-added muffins.
We do offer vegan-friendly breads and granola. Please ask.

One of my heroes, Carol Ann Sayle of Austin's Boggy Creek Farm -- click here to learn more -- wrote this in her weekly newsletter sent July 2, 2007:
" ... a well-fed nation is a free nation.
How will we ever have true "homeland security" if we don't
eat from the land close to us?
How will we be truly nourished as a nation if our people are
wolfing down contaminated, dead slop from other countries in the name
of globalization? In the name of cheap food? Produced not by a
neighbor, but by folks making slave wages, far away, out of sight.
Brought to us on petro-fueled ships. Sold by impersonal corporations.
Food that we should fear ingesting. Food without accountability.
Independent food -- food with a "face" behind it -- is local
food."

No community, no bread.

Our community is made up of the farmers, producers and customers of the Cowtown Famers Market. Community is what makes our bread possible. Community makes it all worthwhile. We are grateful for our community.
